VEGAN TIKKA MASALA RECIPE

Ingredients:
-soy curls (rehydrated and drained- video coming soon!)
-2 tablespoons olive oil
-1 diced onion
-5 cloves of garlic, minced
-1 tablespoon grated ginger
-1 1/2 teaspoons ground cumin
-1 teaspoon coriander
-1 teaspoon turmeric 
-1/4 teaspoon cayenne pepper
-1 teaspoon salt 
-14 ounces tomato sauce
-1 can coconut milk
-chopped cilantro 
-1/4 cup water 

Prepping Soy Curls:
 1) Soy curls are a dehydrated food product. Rehydrate soy curls by soaking in warm water until softened. Drain excess water (we just squeeze with our hands)
2) On medium-high heat, add some olive oil to your pan and sauté soy curls until lightly brown
3) Set soy curls aside for later

Masala Sauce:
1) On medium-high heat, add 2 tablespoons of olive oil to a pan
2) Sauté onions for 3-4 minutes 
3) Add garlic and ginger, sauté for 1 minute 
4) Add spices, salt, tomato sauce, and coconut milk, stir until well combined
5) Let simmer for 10 minutes, stirring frequently. Add the 1/4 cup of water if sauce is too thick.
6) Mix in soy curls and finish with chopped cilantro. We suggest serving with hot rice and naan bread.

Tip: You may also wish to add cauliflower, chickpeas, and/or chopped cashews to your sauce.
